The Country Food Similarity Index groups the countries of Angola, Democratic Republic of Congo, Republic of Congo, and Mozambique into the Central Africa food region. It is one of the 23 world food sub-regions identified by the Index.

In this region, cassava serves as a fundamental ingredient, forming the basis for dishes like fufu, cassava bread, and cassava leaf stews. Fish, often prepared through grilling or steaming, is a significant protein source, in the coastal communities of these nations. Palm oil, rice, corn, and a variety of leafy greens and vegetables contribute to the diversity of dishes, creating a culinary landscape that embraces both regional variations and shared traditions across Central Africa.

Why these ingredients are common in this region

Central Africa Food Region’s Most Representative Country

While each country and ethnic group has its unique culinary traditions, according to the Index, Angola is the country with the most representative food in the Central Africa region. It has similarities to Mozambique, since both countries were colonized by the Portuguese. However, the Democratic Republic of Congo and the Republic of Congo are closer to Angola and also border the Atlantic Ocean.
